Avocado / Tomato Salad

This salad is so easy, it comes together in as long as it takes to cut everything up. It's a go-to for us when we are low on time, and in need of a healthy side item. It also makes a great entree when you top it with grilled chicken!

INGREDIENTS:

 - 1 FARM Avocado - cubed

 - 2 Tomatoes - cubed

 - 1 head of lettuce (we love romaine)

 - Italian Dressing (we love Bernstein’s)

 

DIRECTIONS:

Chop lettuce and top with tomatoes and avocados. Toss with dressing. Enjoy!

 

FARM Guacamole

Classic Guacamole

This is FARM original recipe is a guarantee hit for game day, or any day. 

INGREDIENTS

- 1-2 FARM avocados - mashed

- 1/4 - 1/2 cup FARM salsa

- 4-6 slices of pickled jalapeño

- 1 clove of garlic

- Salt (to taste)

- Juice of 1/2 lime - about 1 tablespoon

DIRECTIONS:

Mince jalapeño and garlic together. Combine all ingredients and mash to desired consistency. Enjoy with tortilla chips.

 

FARM Apple, Cucumber, Bell Pepper Salad

Planning for dinners during the work week can be tough. We're busy and tired and... busy and tired. This salad is so simple, and is a staple on the FARM when we're in a pinch for a healthy addition to dinner (or lunch!).

INGREDIENTS

- 1 apple (your choice, we love honeycrisps). Cored and diced

- 1 cucumber. Peeled, seeded and diced

- 1 bell pepper.  Cored, seeded and diced

- Italian dressing (we love Bernstein's - Restaurant Recipe)

DIRECTIONS

Combine fruits and veggies in a bowl, drizzle dressing, toss and serve!  Add some cubes of feta cheese if you're feeling fancy. This recipe is easy to adapt to whatever you have in the kitchen. We've subbed squash, and beans as veggies with great success.

FARM Salsa

This is our go-to salsa recipe.  Easy to throw together, and keeps well in the fridge.

INGREDIENTS

- 1 can (28 oz) of crushed tomatoes (we love Contadina, in tomato puree and sea salt), or 4 fresh tomatoes

- 1 yellow onion

- 1 jalapeño (or more depending on your love of spice)

- 1 bunch of cilantro

- Salt (to taste)

DIRECTIONS

Empty tomatoes in to blender, add 1/4 of onion, jalapeño (stem removed, halved, with seeds and membrane), 1/2 bunch of cilantro, and pinch of salt. Blend until cilantro, onion and jalapeño are well combined. Taste test salsa with tortilla chip. Add more cilantro, onion, salt and jalapeño as needed. We taste test a lot with FARM recipes, since ingredients vary in flavor from time to time.  Eat right away, or store (covered) in the fridge.  Keep in mind that the salsa will continue to increase in spice while the onion and jalapeños sit. So plan accordingly!
